From Pony Express to Neighborhood Grill: The Story Behind Bluffdale’s Most Historic Restaurant Site
(PRUnderground) August 5th, 2026
This spring, Bout Time expanded its Bluffdale location by adding a family-dedicated area downstairs, while keeping its sports bar atmosphere upstairs. Combining the two was done to ensure everyone in the community feels welcome. This aligns with the roots of this location, which was built on the historic site of the Porter Rockwell Hot Springs Hotel and Brewery.
Founded in 1856 by Porter Rockwell at Point of the Mountain in modern-day Bluffdale, it served the community as a Utah Pony Express Station, inn, brewery, and stable. It was originally started by Porter Rockwell and two business partners, but eventually all partners sold their share to him, and he ran the business independently. He was known for having a favorite rocking chair in the front room of the inn, from which he would watch out the window at travelers passing by. The Pony Express closed in 1861 following the establishment of the transcontinental telegraph, but the Hot Spring Brewery and Hotel continued to operate for several years after.
“It’s important to us to honor the historic legacy of this location,” said Dan Eckersley, Director at Bout Time Pub & Grub. “The Porter Rockwell Hot Springs Hotel and Brewery was a trusted spot to rest when traveling, and a way for the community to come together. We aim to honor that history by creating that same environment, and letting everyone know they have a seat at our table.”
With the update to the Neighborhood Grill area, Bluffdale is further returning to this location’s roots. The new family area includes a dirty soda bar, kids menu with classic favorites, and root beer on tap. This is something the Bluffdale community has been wanting, and Bout Time is excited to offer it now.
Bout Time Neighborhood Grill invites the community to bring their family in, reflect on the history of this site, try out new menu items, and have a great time. Follow Bout Time Neighborhood Grill on Instagram and Facebook to stay updated on events and learn more.
